Venison Processing
For hunters across the Northeastern United States we gladly take in
your venison to be processed into one of our many products. Venison Jerky
and Venison Sticks are the most popular product, with many hunters taking
the meat with them on their next hunting trip. We have customers who are
as far away from our area as Albany, Buffalo, Rochester and Syracuse. Have
you gone on a special hunting trip for Caribou or Moose? We can process
that for you as well.
| Jerky |
You need a minimum of 10lbs. of meat to make venison jerky.
The meat is marinaded, sliced, and then hickory smoked. The price per pound
(green weight) is $2.99. Important note: the better you trim the meat that comes
in, the better the jerky will be going out. You will get about a 40% yield. |
| Snack Sticks |
Venison Snack Sticks consist of venison mixed with spices, and then fermented as
they are smoked in the smokehouse. Snack sticks run at $2.99 per pound
(green weight), and you can expect a 70% yield.
| | Summer Sausage |
This great snack is made of venison and a small amount of
pork* mixed and ground with spices. It
is then fermented as it is smoked. Summer Sausage runs at $2.29 per pound
(green weight), and you can expect about a 95% yield. |
| Sausage |
Sausage comes in three varieties. Breakfast sausage,
Sweet Italian and Hot Italian. The Italian sausages can optionally be
cased for $.85 per pound. The yield is about 125%, because there
is some pork added to it*. It
costs $.75 per pound. |
| Hotdogs |
Hotdogs run at $2.59 per pound, and have an estimated
yield of 200%. Again, there is some pork added*. |
| Jalapeno & Cheese Hotdogs |
Jalapeno and Cheese hotdogs are essentially hotdogs with
jalapeno bits and cheese bits mixed inside of them. They cost $2.99 per
pound, and have a 200% yield because there is some pork added
*, along with the jalapenos and cheese. |
* Pork is added because
venison by itself is too dry to make the product. If it was to be made
out of pure venison, the product would be very crumbly and dry.
